the perfect afternoon snack: BB's easy Energy Balls

For as long as I can remember, my mother has packed THE BEST snacks for all of our family trips. These “energy balls” have always been a staple but ya’ll, watch out, because they are THAT good. So last year, when I went on the Women’s Beach Retreat at our Church, I attempted to channel my inner BB and bring snacks (because bringing pre-made delicious food items to share so you can do more socializing is so where its at :)) so of COURSE I made these energy balls and ya’ll they were THE biggest hit! To the point that tonight we are having a little “Beach Condo Reunion” and I’m required to make them to come lol. They are the perfect afternoon pick-me-up or even a yummy and more “healthy” dessert alternative. They are SO easy and 100% kid approved. Read below for a few other recipe options. ENJOY!!

RECIPE:

2 cups of old fashioned oats

1 cup creamy peanut butter (I only use Jiff)

1/2 cup honey

2 tsp vanilla

1/2 cup MINI choc chips (can replace with raisins)

2/3 cup unsweetened coconut flakes (best roasted but I didn’t this morning lol)

2T chia

2T flax (ground) 

INSTRUCTIONS:

Mix all the ingredients together, roll into balls on parchment paper, put in fridge for 2 hours then ENJOY!!

Another Option: You can also make into bars by smashing ingredients into a 9x13 inch pan and then cut into bars and enjoy :)

Note: They need to be kept in the fridge until serving :) I typically store them in Tupperware with parchment paper in between the layers.
